Yummy, oh so yummy tomato soup

Tonight I made some very, very yummy tomato soup.

It consisted of:

a big can of diced tomatoes
onion
low-sodium V8 juice
Pace picante mild salsa
basil
garlic
italian seasoning

I took half the tomatoes and the onion and pureed them in the blender. I then added that to the rest of the ingredients. Once it simmered for about 10 minutes I poured some over spinach and onions. I couldn’t resist a second bowl so I did the same thing but used spinach and mushrooms. And I get kudos from Darian, my most picky child who doesn’t like tomatoes, and he states “You have to make it again”. This next time I will be sure that my can of tomatoes doesn’t have added salt as that boosted my sodium and I am trying to keep it as low as possible.

I do believe I managed to get the correct RDA’s for amino acids however I’m not sure. I have asked Sie to help me with this as I am still struggling with getting enough protein. I need other protein sources that are vegan and are not soy. Ideas??

On a positive note, I am feeling awesome. I’m not getting that groggy feeling in the afternoon and I have more energy than I have had in a very, very, very long time. I am so thankful that I decided to change my eating habits.
